Jane - You mentioned 'kefolatiri cheese', is this the cheese which is fried and it's all soft and yummy! I am so excited... I am a cheese fanatic and I went to greece about 6 years ago and had this fried cheese (at traditional tavernas) which was amazing... is this what it's called.... is it sad to admit that this was one of the reasons I wanted to go to greece on holiday! ha ha

I'm not nuts, I promise... very bored, off work ill at the moment and going crazy with morning tv! lol

Yes it is, it is gorgeous. You can buy it at the market too, and just fry in a non stick pan, no oil needed. We are always buying it !

There is also haloumi, but that is a bit more squeaky and rubbery. Kefalotiri is nice and soft, but you need to eat it quickly, no problem there......
