IMHO the best fish restaurant is Villa Stasa at Loutra at the end of the peninsula. However, I have never seen anywhere in Halkidiki where you can choose a live lobster. In fact, in recent years, although we have eaten lobster in the past I have not seen it on the menu.
Villa Stasa has fresh sea bream, haddock, small fishes, mullet etc like many other tavernas. However, we know where they buy their fish (in Nea Skioni) and we know the fish is always fresh and tasty, and well kept. They also do brilliant sardines, sardines filleted in vinegar (cold) - these you can find nowhere else and they are superb, gavros, octopus and mussels. It is not a tourist taverna as mostly Greeks go there, and as such the portions are good and the prices are average.
Hope that helps a bit. Someone else may help on the live lobster bit !
