I'd recommend getting a car & doing your own thing,i don't know what trips will be available through the Oceania but if Pella & the petralona caves are on offer then they're good but much better to just go exploring on your own,the whole of the peninsula is lovely & if you don't mind taking a full day out then a visit to Sithonia(the next peninsula)is worth a visit too.

Yes get a car and go for a good look around. As well as Pella and Petralona, if you are used to driving abroad and dont mind a bit of a journey, the Alexander the Great tombs etc in Vergina are excellent. A remarkable bit of history and really well done.
Try a trip round SIthonia, will take a whole day. Some lovely isolated beaches though.
On the Kassandra peninsula, try Siviris beach for quiet time, Hanioti for the night bars and "people watching", Paliori for lunch (lovely Greek old village, but not touristy at all), Loutra and Villa Stassa the end for a good meal and absolutely stunning views over the sea.
Thessaloniki is a beautiful city too, but parking is very hard to find. It took us 25 years to get to know where to park ! But if you can get there, even taking the local buses which run much better than they do here in the UK, try it out. Lovely shops, not all expensive by any means. Visit the market in Aristotles Square (fresh fish, meats, herbs, spices etc., and some really different bits and bobs) as well as a nice taverna called Smyrni.
Try Nikiti which is on the road to SIthonia for nice beaches and some very nice tavernas too.
You cant really go wrong if you get a car. Enjoy it.
